Service Charge. Roussillon follows the British Hospitality Association voluntary ‘Code of Practice on Discretionary Tips and Service Charges’ which requires the company to disclose its policy on these matters. The policy is available on the British Hospitality Association.
The service charge and any collective cash tips are distributed among the staff through a tronc system controlled by members of staff to a formula agreed by a staff committee which itself is independent of the company. A deduction is made from the total service charge received at the rate of 3% to cover the costs incurred by the company in processing payroll and credit charges in respect of the tronc system.
